Broccoli Cheese Soup

I discovered this one in college...its tasty and you can throw it in the fridge and eat it for a few days.
1 1/2 pounds broccoli- fresh
2 cups water
3/4 tsp salt
1/2 cup cornstarch
Mix with 1 cup cold water
1 pint half and half
1 pound velveeta
1/2 tsp pepper

steam or boil broccoli until dinner
place half and half in top of double boiler
add cheese salt and pepper
heat until cheese is melted
add broccoli
mix cornstarch and water in small bowl
stir into cheese mixture in double boiler and heat over simmering water until soup thickens

WW Sour Cream Salsa Chicken

This one of my first Crockpot recipes to make I think my crockpot cooks a little hot so it was a little burned but it was very good and good for you...Evan thought it would be better with tortillas and or chips....

Crockpot Sour Cream Salsa Chicken

4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours.

When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

Green Bean Casserole

I Love This one but too bad Evan doesn't like Green Beans=( great for the holidays.


Ingredients

2 (14.5 ounce) cans green beans, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French fried onions
1 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place green beans and soup in a large microwave-safe bowl. Mix well and heat in the microwave on HIGH until warm (3 to 5 minutes). Stir in 1/2 cup of cheese and heat mixture for another 2 to 3 minutes. Transfer green bean mixture to a casserole dish and sprinkle with French fried onions and remaining cheese.

Bake in a preheated 350 degrees F (175 degrees C) oven until the cheese melts and the onions just begin to brown.

Jalapeno Corn Dip

This is another one of my moms but it is good great for guys Evan really likes this one


1 pkg. ranch dressing mix

2 (8 oz.) cream cheese (softened)

1 can corn (drained)

1 small can dark olives (chopped)

1 small can jalapenos (chopped)

1 bell pepper (finely chopped)

Mix well and chill over night. If you do not want the dip to be hot substitute green chilies for the jalapenos. Serve with chips, crackers or vegetables.

Mexican Casserole

I am pretty sure I got this one from my mom... It is super easy I have made it several times

2lbs hamburger

2 can ranch style beans w/jalapeƱos

12 oz freetos

2 cans mushroom soup

1 lb cheddar cheese

1 bell pepper

1 onion

Brown meat and onions drain … add soup, beans, peppers add ½ cheese and ½ freetos, cook 20-30 min 350

MM Fondant


I just tried this and it really works and is pretty good but let me warn you it is MESSY! I added a picture of a practice cake I made using this recipe=) To get the color I just kneaded in food coloring ...its not perfect but I was proud of my first try.

16 ounces white mini marshmallows (use a good quality brand)

2 to 5 tablespoons water

2 pounds icing sugar (please use C&H Cane Powdered Sugar for the best results)

½ cup Crisco shortening (you will be digging into it so place in a very easily accessed bowl)

NOTE: Please be careful, this first stage can get hot.

Melt marshmallows and 2 tablespoons of water in a microwave or double boiler: Put the bowl in the microwave for 30 seconds, open microwave and stir, back in microwave for 30 seconds more, open microwave and stir again, and continue doing this until melted. It usually takes about 2 ½ minutes total. Place 3/4 of the powdered sugar on the top of the melted marshmallow mix.

Now grease your hands GENEROUSLY - palms, backs and in between fingers, then heavily grease the counter you will be using and dump the bowl of marshmallow/sugar mixture in the middle. (By the way, this recipe is also good for your hands. When I’m done, they are baby soft.)

Start kneading like you would bread dough. You will immediately see why you have greased your hands. If you have children in the room they will either laugh at you or look at you with a questioning expression. You might even hear a muttered, “What are you doing?”

Keep kneading, this stuff is sticky at this stage! Add the rest of the powdered sugar and knead some more. Re-grease your hands and counter when the fondant is sticking. If the mix is tearing easily, it is to dry, so add water (about ½ tablespoon at a time then knead it in). It usually takes me about 8 minutes to get a firm smooth elastic ball so that it will stretch without tearing when you apply it to the cake.

Salsa

When I make this for Evan I use A LOT of jalepenos because he likes it spicy!

· 1 can whole peeled tomatoes

· 2 cans Rotel

· half cup of dices onions

· diced canned jalepenos (these are at your discretions, use a couple tablespoons for milder and add for spicier)

· 2 tablesoons Garlic Powder (or to taste)

Salt to taste

Cold Spinach Dip

This is really good for showers and such... and super easy


Spinach Dip

1 cup miracle whip salad dressing

1 cup sour cream

1 pkg. (1.1 oz) Ranch salad dressing mix

1 pkg. (10 oz) chopped spinach, thawed, well drained

1 can (8 oz) water chestnuts, drained, chopped

½ cup chopped red bell pepper

1 (8 inch) round sourdough or white bread loaf

Mix salad dressing, sour cream and salad dressing mix until well blended.

Add spinach, water chestnuts, red peppers; mix well. Refrigerate.

Cut top of loaf crust. Dip out inside of loaf. Before serving fill loaf with dip.

Cut leftover bread in cubes of strips.

Slap Happy Biscuits

Slap Happy Biscuit's
1/2 cup warm water---add 1 teaspoon sugar---1pkg dry yeast
Mix ingerdients together and let set 5 minutes.
Sift together 4 1/2cups flour---four teaspoons baking powder--1/3 teaspoon soda 1 teaspoon salt--1/2 cup sugar or splender
Make well in dry mixture and add Two cups buttermilk---1/2 cup oil and the yeast muxture you had set aside.
Mix together really well.
Cover the bowl, put in fridg. and cover with saran wrap use as needed Pat out and cut with biscuit cutter, put on a greased pan.
Do not put biscuits to close together.

Bake at 375 degrees for 20 minutes or till brown

Green Dip

Ingredients: ·
4 Avocados ·
1 (16 oz.) container Sour Cream ·
1 can Rotel tomatoes ·
1 Tbsp. Garlic Powder ·
1 (4 oz.) can Green Chili Peppers ·
2 tsp. Salt ·
1 tsp. Lemon juice ·
3 oz. Cream Cheese
( I actually never measure the Garlic Powder and Salt, I just do it to taste.)
I also have been adding more avocados but pretty much you can't go wrong it always taste good.
Depending on if you want a chunky or smooth dip you can put it in a blender or mixer.
